Been a long time since I last posted. Been going through some stuff that I’m sure I’ll share later but one of the main reasons I haven’t been blogging is because I always feel as if I need to have the right thing to say at the right time and that my execution should be perfect. Which leaves me saying and doing nothing at all! I don’t think I’m alone in that and so this morning, I’m just winging it and sharing something I did without worrying too much over the details. And what I just did was make protein pancakes I found at this website, Pinch of Yum. I’ve been doing a fair bit of running and just did a TOUGH workout yesterday with this group, No Excuse Mom, so I figured that I should try to get a bit of a protein boost. I did have to sub out an ingredient or two but these came out great! They basically taste like whole wheat pancakes. Just a few notes if you decide to make them: They can be dry; have the syrup ready Make sure to start with a super-hot pan I used a Ninja blender, which is great, but won’t break up the seeds like a Vitamix And that’s about it! I’m tossing in some less than perfect photos but I hope you all have a more than perfect day 🥰 |
